1½ cup Basmati Rice
1 Onion, sliced
1 Capsicum, cut in to cubes
1 Tomato, chopped
2 Garlic, chopped
1 cup Crushed Peanuts (dry roast & crushed)
2 tsp Oil
1 tsp Cumin Seeds
Few Curry Leaves
½ tsp Chilli Powder
½ tsp Turmeric Powder
Salt, as needed
Cook rice beforehand with 3 cups of water.
Heat oil in a pan add cumin seeds and let them pop.
Add sliced onion and fry for a minute.
When the onions turn pink, add chopped garlic and capsicum cubes and fry for 2 minutes.
Add tomato cubes and let it cook till tomato is tender.
Add chilli powder, turmeric powder, and crushed peanuts and salt to taste stir once and add cooked rice.
Mix well and serve.
