Corn Pulav

Masala - Grind a chopped Onion, 4 pods of Garlic, chopped ½" Ginger, ¼ tsp of Turmeric Powder, 1 tbsp of Coriander Powder, ¼ tsp of Garam Masala and 1 tsp of Red Chilli Powder to a fine mixture.

Rice - Wash and soak the a cup of Basmati Rice for 10 minutes. Heat a tsp of Ghee in a pan, fry the drained rice until the water is evaporated, for 2 mins and keep aside.

Heat a tbsp of Ghee in a pan, add 3 Cloves, 2 Cardamom, a Biriyani Leaf, an inch of Cinnamon and fry for a minute. Add 2 sliced Onions to it and fry till they turn brown in color. Add the masala mixture to it and fry until ghee separates from the mixture. Add ¾ cup of Fresh Corn to it and fry for another couple of minutes. Add slightly roasted rice, mix well and add 2 cups of Water, Salt to taste and mix. Transfer to a pressure cooker and cook for 1 whistle and simmer the flame for 8-10 mins. After the pressure is released open the lid; add a tsp of chopped Coriander Leaves, 10 ghee fried Cashewnuts and mix.

Serve hot with raita.
