Curry - Heat 2 tbsp Oil in a saute pan until smoking hot. Add ¼ tsp of Turmeric Powder and 2 tsp of Ajwain (Carom Seeds) and wait for them to crackle. Add finely chopped or grated 1" Ginger and saute it. Add finely chopped 4 Green Chillies and again saute for a minute. Add the par-boiled potato cubes and fry till light brown in color on Medium-high heat. Add the cauliflower florets and stri-fry till thy appear to be in light brown shade too. Add 1 tsp Garam Masala and chopped Cilantro. Sprinkle ½ tsp of Lemon Juice and mix well. Adjust Salt to taste.
Serve hot with Roti, Naan, or Rice.
